I'm glad you enjoyed it. It funny you say its aimed at high school girls since in Japan it actually seems to be men in their twenties who like it but I can see what you mean in a western sense. Honestly whichever u watch next is based off preference.
There's Nijigasaki which is technically a side story and is the second latest installment in the franchise, its a bit undeveloped at the minute because it only has one season and there's a lot of characters that don't get enough screen time but the animation is pretty nice. Then there's sunshine which is a bit insane at times but it has lovable characters and a decent plot with some good slice of life episodes thrown in. Last is school idol project which is the original, has some awful CG at times but the characters are insanely iconic and work together really well. Plot can be kind of cringey at times but you can just laugh at it when it does get cringey.
So in short, there isn't really an order to watch it in, I'd say just pick whichever one you think looks the most interesting or one that you think has a nice character design in it

Comparing an episode list to my memory of impactful moments... the first one happens in episode 21. I'm not gonna tell you to slog through all that if you're not enjoying it, but I think a lot of the coolest parts happen in the second half. That's when the real payoff of the character development happens.
