I'm in a similar boat as you but after watching anime for all these years, I can't really say that Toei or Pierrot are among my favorite studios anymore.
I'm a huge fan of most of the long running Shounen as well and I appreciate what Toei and Pierrot have done to make these adaptations possible but despite that I've felt that both of their work as of recent years isn't really upto par with what they used to do or at least nowhere close to the level of quality that other studios seem to be putting out. The best example I can give is Pierrot's adaptation of Black Clover in contrast to Bones's adaptation of Boku no Hero Academia. The difference in quality between both of them is astounding and Pierrot could've honestly done a way better job when it comes to adapting Black Clover.
As for Toei, I can't really fault them for dragging One Piece the way they do since they've got no choice on the matter and they do come through when you expect them to but I've often felt that the Toei and Pierrot from the 90's and 2000-2010 were better. That said, Toei still have fantastic production quality when it comes to movies.
I'm not disagreeing with you and I support your view on anime being entertainment first. I'm just interested in understanding what you like about today's Toei and Pierrot apart from the fact they made the shows we've grown up with. :P
