And regarding the spinoff and alternative universe series, I can definitely recommend Gundam 00 (https://myanimelist.net/anime/2581/Kidou_Senshi_Gundam_00). It´s a cool standalone series with modern animation and only has two seasons and a movie.

Well, it is a more popular way of reading since most people don't wanna read a bad scanned 90s delinquent manga but it is very crucial to understand some of the moments in GTO that you've read SJG.
You could do BC>SJG>GTO as that is the chronological way but if you check my Twitter account I've done a "better" reading order which I think suits the story better

the things i loved most about Haibane Renmei is the world it was so beautiful and wistful i was in awe for real. The emotional impact also it was just so well done and hit me like a train, so much tears. Lastly the characters i just grew immersed in them and their connections to each other!
