Well, is pretty easy. The start point is the original manga of Saint Seiya or the classic anime of 80's. The story is the same in general between manga and anime adaptation, but due to the fact Toei made the anime when Kurumada (the author) was writing the manga there are many fillers (mostly good, especially the big filler arc of Asgard, my favorite) and various minor and major changes also in the main story (even, as i say, the characters are the same, and the 3 main arcs of Sanctuary, Poseidon y Hades are the same). Here is your choice, you can only read the manga, only watch the anime (the original serie is of 114 episode, then there are the 31 OVAS of Hades to complete), or doing both.

The manga go straight on, it is more linear and direct, sometimes more logical, but it's hard to find online (in english at least). The anime for me is better, more easy to find, the graphics and the music are excellent, but it is more dispersive in fact, and has more inconsistencies than the manga already has.

As for the other series, well, it's a multiverse. There is only one official spin-off written by the same author, therefore canonical, but the pace of publication is very slow (started in 2006, around 100 chapters and 14 volumes now, more or less 7 chapters for year). All other works were written by different authors (with Kurumada's permission) or made by Toei, so they are not connected to each other. They are prequels, sequels, midquels, parallel universes, which you can see or read in any order you want. The only thing is that you need the classic serie as start point, only that (not for all, but it's better like this).

If you want, I'll make a separate parenthesis to tell you what they talk about, and which ones deserve to be seen.

With Saint Seiya manga are you referring to how to start into Saint Seiya Universe or where to find the manga of the original series?

I know that it can be for many people. So maybe for you as well.

But it will improve a lot afterwards.
