It's my pleasure to be of help, and I hope you will find visual novels to your liking when/if the time will come!

I'll be honest, when it comes to the Fate franchise the only thing I can recommend is reading the Fate/stay night visual novel and then you can pretty much watch/read whatever you want out of the franchise. The reason is that they made a mess out of the anime adaptations, there is not even a proper way to watch the first route which is the first thing you should experience out of the franchise.
You can still start with the anime, it's just not something I can recommend wholeheartedly.
If you are still choosing to go with the anime let me help you a bit from web searching, you can go by two orders:

Fate/stay night (Not a good adaptation by studio deen - all of the three routes mixed but the primary is the first route so it's the only way to experience it in anime form) ---> Fate/zero ---> Fate/stay night Unlimited Blade Works ---> Fate/stay night Heaven's feel.

The other order is simple, just ignore the deen adaptation and start with zero and so on which is something I wouldn't recommend but I can't recommend the deen adaptation either. That's why I think that the only proper way to get into the franchise is to read the original VN.

Leaving on that note, I do love the Fate franchise a lot, and if you will get into it, I hope you will enjoy it as much as I do!
