1. What's an Angel? In the Mythology of Eva, there are two types of Lovecraftian aliens that create life: Adam and Lilith. They are both contained within 2 different giant eggs, the white eggs being Adam and the Black eggs being Lilith. Each planet in the solar system got 1 egg each, except for Earth, which got two. Normal life comes from Lilith, Angels are the beings that come from Adam.
2. Why did the South Pole explode? The egg of Adam that landed on earth landed in the South Pole, and GEHIRN, a research facility headed by Gendo, Fuyutsuki, and Misato's dad thought it would be a good idea if someone touched it. oooooops
3. Why is Shinji such a grouse? Shinji was traumatized after witnessing the death of his mother at a young age. And then his dad left him to fend for himself soon after. So Shinji, being a neglected child, acts like a neglected child.
4.Why is Asuka's mom talking to her inside the Eva if she's dead? Asuka lost her marbles because she was so tsundere her mind and body couldn't take the pressure.
5. Why make children pilot the EVAs? Because only people that were born on the year of second impact (which took place 15 years ago) could pilot them.
6. What is the Human Instrumentality Project? It turns out that all normal life is made of LCL and the only thing that keeps us from turning into orange goo is a massive AT field. SEELE wants to remove the AT field because they believe that being orange goo is the equivalent of a Lennon-esque hippy-dippy Marxist fantasy land ie: no wars, no Religion, no Individuality, etc. because things like free will and Individuality are just. Plain. Icky.
Now you might have more questions that came from the answers I gave you, but I can't answer those because Neon Genesis Evangelion is only slightly less vague than you originally thought.
