Well, it's going to take time because you've asked many things at once. So, here I go. :-P
I mean, only other introverts can understand this, others will see it as arrogant, while we're just focusing on ourselves, haha.
Gintama isn't something you'll be interested in until 25 episodes (at least for me), as the first two cours are just a character introduction and setup, well it's a long series. What I liked about the series is definitely its characters and comedy/humour, and how they roast every thing in anime industry to all other anime (like big 3 or others), while the last arc is crowning accomplishment, for all the time you invested in the series. (10+/10 for that particular arc)
As for Fate, it's complicated to say in a paragraph, but, Kiritsugu and Fate/Zero are what got me interested in the series, and it's one of my favourites now. Plus, top-notch animation of "heaven's feel" and mostly the plot and adaption of all fate franchise. (I am also a Nasuverse enjoyer, so...)
The monster anime is a slow burn, while the manga is fast, but the adaptation is perfect. Anyway, the thing that interests me in the series is GOAT Johan and the conflicts that happens between characters. If you are more into action And fast paced story, then it's probably not for you. One of the best antagonist of all time.
I hope it answered all your questions, and the last thing is that, all of these anime you mentioned requires a good amount of time investment, to really enjoy it.
