Earlier I suggested Fate Zero or Steins Gate, since you finished fate you should watch Steins Gate! (Ranked top 5 for good reason imo)
Go with Steins Gate for a good overall masterpiece. (24 eps)
Or try Madoka Magica for a shorter darker one (only 12 eps)

I still need to finish Rainbow (omg, stopped at like 19 and was planning to finish but somehow I got distracted).
TBH, i dont remember the ending. So i cant explained it to you. Moreover, i only watched the first season and the ova so i cant provide with some explanation. lol.

UBW = unlimited blade works.
Fate Zero is the prequel (and realllllly good). UBW was just so-so in my opinion. So you'd start with Fate Zero first, then UBW afterwards.

and that's it. There are some other random spinoffs and an old 2006 version that there's no need to watch. So just the above 2. Let me know once you start Fate Zero!
Or you meant for the Fate series? (There is an old crappy version from 2006 that is not recommended). This is the prequel to Fate Stay Night: UBW (came out like last year, was mediocre compared to Fate Zero though). So you would start with Fate Zero anyway for the entire Fate series.
