Probably the same reason why you(and everyone else) have favorite characters listed.
Because I think they are a well designed/written character with a likable personality to match. I'm not sure I quantify most of them to be "lolis" but if you wanna call them using that term then go ahead I guess. And no, don't go thinking I like them because they are "lolis".
Honestly if MAL gave more than 10 favorite slots without "supporter" status I would gladly put more "non-loli" characters there. Since there are a lot of good characters that I personally liked.
I don't really know what you mean by a good plot nor do I get what kind of plot you're looking for. But sure if you're asking in terms of psychological aspect alone, then you might as well try:
Btooom! - However, the story gets messed up at the end (which I won't spoil). But if you're a person who values the ending of a show in a significant manner, then don't watch it.
Kaguya-sama wa Kokurasetai: Tensai-tachi no Renai Zunousen - This is a romance series where you see the main characters resorting to measures so that could get the other to confess their feelings.
Kakegurui - Another psychological anime which is about gambling. I don't recommend watching it if you can't handle sadism to some extent. And it has a decent plot and mainly focuses on characters competing with each other for power.
Mirai Nikki - This is more or less a good psychological anime too. However, you won't it enjoy it much if you hate beta male characters and yanderes in general.
Monster - Alright, this series surrounds a doctor who saves a patient and that patient is actually a murderer. Well, you'd know the rest when you watch it.
Yakusoku no Neverland - Surrounds kids trying to escape an orphanage that actually sells their meat after a certain requirement. Has a good overall development so far.
Even though, I've mentioned about liking psychological anime, I haven't watched much. And the ones I've are mostly mainstream anime. So yeah, I think it might be better if you asked someone else.
