it's been so long it feels hard to summarize everything you might have missed. Pretty sure there has been some amazing stuff.
The most recent thing I remember being worth watching was BNA and the KonoSuba sequel.

Did you miss Youjo Senki? There was Megalo Box! (I recommend watching Ashita no Joe 2 prior, if you don't know the series).
Overlord sequels, though I had most fun reading, the voice actors made up for everything that the anime lacks.
Miss Kobayashi's Dragon Maid was cute, Tales of Zestiria + sequel (an eye opener).

If you want to push yourself over the edge there was Made in Abyss and Goblin Slayer, though the former is more immersive (not necessarily a good thing).
I recommend to watch Asobi Asobase and Chio's School Road to lift your spirits after watching the dark stuff.
That should cover you for some time, enjoy!

edit: definetly watch everything from Sidonia no Kishi (I saw you had that on hold reading). Tate no Yuusha no Nariagari - was a good manga read and anime execution was nice, annoying mascot character voice aside.

edit2: there was vinland too, great voice acting made up for limited character development of the MC. True MC was someone else anyway from my point of view.

while I get your point I wondered if you know that D. Gray-man celebrates its grand return this month? Just saw the first episode aired already, gonna watch it now.

I actually thought it started becoming really bad during the middle episodes, but then, the last episode was really, really good. I was too lazy to edit my review :P
