Still making my way through Gundam so I'm no expert, but I'd say it's best to start with the Universal Century (UC) timeline since it's the core story.
0079 > Zeta > ZZ > Char's Counterattack > Unicorn > F91 > Victory > Turn A

The last 3 are considered Late Universal Century, but they're still connected to the UC timeline. 08th MS Team, 0080: War in the Pocket, 0083: Stardust Memory, and Thunderbolt can be watched any time after the original 0079. There are 3 movies of 0079 that condense the entire TV series to its most crucial and excludes all the fluff. You can just watch those if you really want, then go onto Zeta. The original TV series is iconic and great for its time, but it can be too dated for some. Whichever start you choose should be fine. Origin is an updated modern retelling of 0079. Best to complete the original first.

All the countless spin-offs like Wing, Seed, 00, Fighter G, and Iron-Blood are Alternate Universal Century (AUC) timeline stuff that have no connection to each other or the UC, so they can be watched in any order. Good luck man Gundam is quite the long rabbit hole.

Ah yes, I'd like to see so much more of Echidna!!! Yeaah, she might just be the best for this season! Tho it's sad that she's clearly not one of the coming main characters cuz I'd like to see her in the series in the future as well.
Ooh those seem like pretty good series! I'm quite excited about many series next season but here's few to mention: Danmachi, Mahouka koukou no rettousei s2, Inuyasha sequel, Tonikaku kawaii and Kamisama ni natta hi. But overall, I think the coming season is gonna be amazing!
