Ehh... Something I tried memorizing from a Rachel Ray show.. Didn't come out exactly but close enough. This is basically a base for it, but try it out anyway. Not only about learning, but making something your own too.

Equipment needed:
Food Processor (medium size, around 8 cup size)
Saute pan with lid

Fresh/Frozen Spinach (about 9 oz. thawed if frozen)
5-7 garlic cloves
1 onion
Olive oil (enough to coat the pan)
2 packs of cream cheese
shredded Italian blend cheese
Paprika
Salt/Pepper


Make sure your spinach is prepared and/or thawed before using....

Peel garlic cloves and press them, but don't smash them all the way.

Cut onion in half (and removing the ends), then cut each half into quarters.

Under medium heat, saute the garlic and onions until onions are starting to become soft. Reduce heat to med-low and add spinach, season with salt/pepper, and mix with onions and garlic. Cover and let simmer for about 6 minutes.

Strain any excess water and transfer everything into the food processor. Cut up the cream cheese into chunks and add to the spinach. Season with salt, pepper, and paprika. Pulse the food processor until desired texture. Adjust seasoning as needed.

After you transfer your dip into a serving bowl, top with shredded cheese. Green onions are also a nice addition. Serve with some toasted pita bread, or even in a tortilla wrap.
