| Mandarin Orange Cake Ingredients 1 18oz box/package of yellow cake mix 4 eggs 1 cup of vegetable oil 1 - 11 ounce can mandarin orange segments in light syrup 1 - 8 ounce container of whipped topping thawed 1 - 20 ounce can crushed pineapple with juice 1 - 3.5 ounce package of instant vanilla pudding mix 2 -8" round cake pans or 1-9"x13" baking pan ( round cake pans for double layer, baking pan for single layer. ) Directions: 1. Preheat oven to 350. Afterwards, grease your baking pan(s). I normally put a little oil on a napkin and wipe it down. 2. Next in a large bowl you will need to combine the cake mix, eggs, oil, and mandarin oranges with juice. Beat this until smooth and cake mix is well blended. Pour the batter into the prepared pan(s). Bake for about 35-40 minutes. If not sure if cake is done, test the center with a toothpick and see if cake comes out clean. Remove from oven when done and let cool. 3. While this cools, you will need to prepare the topping. In another large bowl, mix together the whipped cream, pineapple with juice, and dry pudding until well blended. 4. If you chose a single layer cake, spread the topping over it and wah-la, you are done. If you chose the double layer cake. Flop out the first layer on a cake dish. Make sure to get a nice layer of topping over it and the plop down the next layer. Add the rest of the cream mixture over this part and even out on sides. This is personally the way I love making my Mandarin Orange Cake. Hope everyone enjoys it! |
