i recently finished watching the movie but i dont understand some things.
how did masamune father die, how did he find itsuki, if he died how was he able to write in the diary, also what did he meant when he said he cant change.

His father's death is related to the explosion at the beginning of the film. Thus he was not a real person in the film, but a kind of fantastic clone, stuck in an infinite time and space thanks to those cracks in the sky, the characters could escape from that temporary illusion.
Masamune found Itsumi in the factory, she was transposed as a non-speaking being in that world, but she coexisted in real life and needed to live, that's why she left the illusion!
As the name of the film says, "Maboroshi" means illusion, and "Koujou" = factory.
The other questions you asked are in direct agreement with what I reported here. The world was an illusion and death had no effect on the characters except Itsumi

could you tell at what exact time did they got stuck in the loop, was it before the explosion or after the explosion. if it's before then why is the explosion again and again mentioned in the movie and if it's after then masaume's father shouldn't be alive and if he's not alive how did he write in his diary ?
the most confusing part for me in the movie is the diary part where the father's diary was revealed to masamune

@chee_tah If you don't want to dig too deep and discuss complicated things at length, just take the film as a metaphor for accepting traumatic memories and living in the past is detrimental to your life. This is a recurring motif in Mari Okada's fiction.

the plot was confusing but the animation was pretty so that's good enough for me ig

@chee_tah Right. As far as I could tell. The factory exploded and roughly at the same time Itsumi crossed over on the train to the parallel world where the story takes place. In this parallel world the workers survived the explosion (or it never actually happened).
Masamune father is therefore still alive, but he knew that the parallel wasn't real and as he watched his son get better at drawing it made him sad that it would never amount to anything. He got so sad he cracked and got taken away by the smoke monsters.
