Pretty much all the anime is cannon. There are some changes they made to it, but overall it follows the game’s story.

There is 3 parts, A, B and C. A and B cover the same story but from the different perspectives of 2B and 9S respectively. Season 1 covered both those parts with some changes. Part C is a continuation of parts A and B and is being covered in this season . So yes part C in canon.

There are 26 endings for nier automata. Ending A-E are the canon endings that happen at the end of part A-C. There is also ending F-Z which happen when you ver off the main storyline in someways and are usually quite memey and don’t really add much to the story.

It's the same story as the game but with some minor changes and additional scenes, although it cut a bit of content as well, but it's still largely the same story, sooo yea, I guess its "canon"

The Nier-Drakengard series has multiple timelines (don’t expect time travel), so everything that happens is canon in some timeline. The current anime is following a storyline that hasn’t been explored by the game or the books so far. However, the events are similar to those in the game with some differences. Where this will lead is still unknown, as the ending will likely be different—just HOW different is the question
If you have any more questions, feel free to ask.

Asking whether something Yoko Taro related is canon before it’s finished is almost always futile. Even asking before it has a sequel that confirms a specific ending can be risky.
Ending C is not the “only canon ending” of the game, that would most likely be ending E, which flows from ending D. We don’t even know if the ending of the anime will look close to any of these yet.
So far there have been mostly minor changes, but a few key reveals have come in a different sequence. The way the characters find out about certain things could have a snowball or butterfly effect (idk which term would be more applicable in this case) and the ending could look very different.

There is no sequel that confirms the canon ending of Automata (nothing that happens after the year that it ends in the timeline), so maybe the anime ending will be canon instead of the game.

This is a good video for understanding everything up to now, but it was also made during the first half of the anime airing about a year ago, so it only mentions the differences up to that point:

(Also, it’s over 6 hours long lmao)

P.S. play the game at some point. Anime is decent but certain things (especially the endings we’ve had so far) hit harder in the game.

We can’t yet tell which ending the anime is gonna follow, since A and B aren’t the “ending(s)” of the story. Route C is the continuation of A and B, this route has three endings: ending C, D, and E. So we can’t know for now which of these endings the anime is gonna cover….

The anime is doing a really good job of staying true to the game enough to please fans whilst also making a few changes that help distinguish itself as it’s own thing, which im more than happy to see, i personally see it as a love letter to the games fanbase as well as an entry point for those who havent played it yet

If you havent played the games i highly recommend them, i think Nier Automata is one of the greatest video games of all time
