It seems to be over as of April/ July 2019 with 7 volumes in total, yet on here it is still ranked as publishing? I'm just curious if there is more?

That's because mal is understaffed and manga moderators' priority is on adding new titles to the database rather than updating existing ones.
Arc-V is indeed over with 7 volumes.
