So, I want to watch this anime and will continue the manga later after i finish the anime but looking at cloverwork's past track record, they skip a lot of contents when they adapts something like how horimiya was crushed into 13 episodes which has 139 Manga chapters, my dress up darling skip some minor scenes and scenes from the Manga but it was the closest they didn't skip that i can think of, so i wanted to continue the Manga from the beginning from chapter 01 if it's the usual cloverworks adaptation but if they didn't skip much contents then I want to continue from where the anime left of.

All major contents up to chapter 23 (Vol. 4) has been adapted. Extras and bonus chapters (e.g.: ch. 6.5 or 13.5...) are missing, though. Apart from the missing contents, there are also a couple of scenes that are original to the anime.
I think the adaption is mostly similar to My Dress-Up Darling, that you mentioned. You can continue from Vol. 4 after the series end, read only the missing contents, or simply re-start from ch. 1.
On the quality side, I must say that the visuals are beautiful and backgrounds are amazing, but obviously you can't get all the original drawings' charm just from the anime.
It still remain a solid adaption, so you can choose what you prefer. I personally re-read it from the beginning to spot the differences.

Horimiya is a special case though, they clearly wanted to adapt the main story line from begining to end but didn't or couldn't take the risk of making a season of 26 episodes. The promised neverland is a special case (in bad way).
Akebi being a slice of life iyashikei meant that the season could end almost anywhere without feeling incomplete.
