The next episodes are gonna cover Rin in her third year and Eiji in college. There's still more highlights that happen in the manga after what episode 7 covers. The last episode will probably be the time skip to when they're adults.

is the plan to adapt the entire manga in 12 episodes? also are they skipping content?

Yep, definetely. They've adapted 78 chapters of Manga in just 7 episodes, so, they'll complete the whole Manga with this season (Obviously they skipped content)

The manga is relatively short. 130 chapters and most of them have only 4 pages.
Right now almost every chapter up to chapter 80 (if not all) has been covered.
So my guess is that they won't skip content.
