I'm a big fan of this series and hyped for S2. But what I'm really positively baffled about is the thorough adaption of the LN. In the past the general rule was that one LN leads to 4 Anime episodes, but here we have only two LNs adapted which leads to 24 eps, which equals 12 eps per LN.
I'm really happy about that and also looking forward to continue this pace in the seasons to come.

Also I'm interested how this is possible for this anime and not for others. Is the budget such vast on this one?

12 episodes per volume, damn... and the only Light Novel I read, gets the treatment of 2 episodes per volume (well, that was the reason I started cote but still)

Is this the difference between Kadokawa and Toho?
I heard kadokawa was about to ruin Re:Zero but White Fox saved it. The sad part is most of the good Light Novels for some reason seem to belong to Kadokawa

I think it's because of two factors: episode quantity and the episodic nature of the series itself

most anime these days are tied to 12-episodes seasons, which means they have to rush whatever they adapt (like Classroom of the Elite). Since Apothecary Diaries got a 24 episode season, it was given enough time to adapt the source in a better paced way

Plus, there's also the fact this show was treated as a "detective show" in a way, with every episode being a new case to figure out (or would it be more appropriate to compare it to a hospital drama like House?) so it's not like they feel the need to rush things, given that's kinda the selling point of the series.

86 also got that treatment, cour 1 adapted Vol 1 and I think cour 2 adapted vol 2-4. 86’s volumes are short they’re barely 60 pages long.

AD’s volumes are like 200 pages long.

AD’s volumes are like 200 pages long.

Idk where you got the 60 pages from. The shortest 86 volume in English so far is volume 2 with 189 pages. And part 2 covered volumes 2-3.

As someone mentioned earlier, producers play a part in this. Some producers (ie. Kadokawa) try to cram in many LNs in an anime, leading to content being cut (look no further than this season's Unnamed Memory).

It's mostly the staff assigned for the project, if they're passionate it ends up being good, if they're passionate and provided with a decent schedule it ends up being very good
Idk how much influence Kadokawa or Toho has with the 'exact way a series is adapted'

Well another one of my favourite anime, mushoku tensei, also got the standard pace with 4eps per volume and this one is supposedly hyped as well. But yeah it's Kadokawa.

I think producers like Kadokawa and Toho decide how much to cover over how many episodes (i.e 5 volumes in 13 episodes, 2 volumes in 24 episodes), the staff decides how they are gonna adapt (like White Fox decided Pay TV Station so they could make 30 minutes episodes instead of 24 minutes episodes, they also skipped the opening and ending every episode), since most Kadokawa Light Novel based anime seems to be rushed in pacing

I don't think it's that simple, cuz most of these adaptations are made to promote the source material, without a passionate producer/staff these projects end up being a 12 episode ad
Most of the good adaptations have great teams doing it

after reading the light novel, I think it might be because there were a lot of small incidents that were tight up to the main plot point so much so that they couldn't eliminate anything.

spoiler ahead:

like the part with Jinshi assassination, there were many small cases that preoccupied the main characters, gaining clues from her father and other characters brought out this giant puzzle that started to pieces together at the end. Also, there are more Easter eggs here and there that will impact the story a lot (if there were to green light another season), and they become recurring characters that drive the story. And I really loved the anime since they were faithful to the original LN, and the animation looked so beautiful.

Unfortunately for most anime adaptations, the executives behind them typically aren't passionate fans of the source material. They tend to see the anime version as a glorified trailer to sell more books.

Fans of The Apothecary Diaries should consider themselves very fortunate that the leads responsible for making the anime have enough clout to ensure that the "12 episodes per volume" guideline is followed.
