I’ve just started to watch this, now having watch all episodes now out, it seems like a really good show and premise. With both its action and romance aspect, it could likely be a great show and one of my favorites for years to come. It made me realize that I enjoy the type of love triangle in this show, being a more jealousy and vying for his love kind of triangle. Does anyone know other animes that have a love triangle like this?

Well, if you're looking for a love triangle I highly recommend Domestic Girlfriend and Kiss x Sis.

Besides what has already been mentioned, I would say Arifureta.
Similar to this show, the MC meets a female that is not human and they work together to defeat whatever comes their way. Along the way they meet more females (A dragon, A Bunny, and A close friend) and that creates an odd relationship within the group. Although the male MC only has eyes for only one of them.

This is based off what has aired, not the manga/LN.
