If all of their dreams were supposed to be something they always wanted so they’ll fall deeper in their sleep, why was Rengoku’s dream his father telling him he’s worthless? Maybe lower one was extra careful with Rengoku, and made his dream realistic and personal so he wouldn’t notice he was dreaming?

I found it a little odd myself and am starting to think it's more about his little brother then his father.

Yeah I was wondering if perhaps that situation had occurred and what he dreamt about was what he wished he said to his younger brother.

Because Rengoku is a realist, who does not dwell on the past.

Like the other's already mentioned, the dream was most likely related to what he wished to say to his little brother.

Maybe he already knew that his father was going to say that to him, he's a grown man, he understand his father better than anyone so he already expected his father to say that so he could talk to his little brother afterwards and say to him what he really wanted to say.

That's my excuse but that excuse makes sense to me.

I was also wondering as well why he had that kind of dream with quite sad moments, like those with his dad. I guess he has just accepted the choice made by his father and respected it, so - just like @Piromysl said - he didn't return to it, but rather focused on the present (his duties as Demon Slayer) and the future (assuring that his younger brother will live a peaceful and good life).
