He turned into a titan because the plan for his daughter to get the founding titan became a failure, it was a sort of in the heat of the moment choice I think, he originally didnt want to get the founding titan (I think because of the curse of dying after 13 years) but then his daughter attacked him and went to free eren, so he then licked the injection that got on the floor,

also in flashbacks he originally was angry at his father for not wanting to save humanity but after his brother got the founding he changed a bit, and fully committed to helping his brother and then freida in continuing the will of the first king

he was not destroying everything he just want to eat humans like every other normal and abnormal titans. And about why titans eat humans is because they wanted to relieve from the curse of being the titan and become human again that's why.

his intention was to bring the founder titan back to the world through his daughter "bring the god back" but she didn't support in doing that, so at last he took in the serum and tried to become founder titan himself even tho he was afraid of the curse of ymir and turned into a abnormal titan.
