Firstly, I think the Movie "STAND BY ME DORAEMON" was something that would hit the long time fan of the series really different than what it might have impacted a new viewer.

Doraemon is the story about Nobita Nobi, a loser in general. One day, from his study desk drawer, comes out a weird looking cat robot who claims to be from the 22nd century. He is sent to Nobita from Nobita's future Grandson, who doesn't want his grandpa to stay as a loser. That's the gist of the story. from there starts an Episodic show about different situations Nobita and Doraemon and their friends face.

Doraemon is the official cultural Icon of Japan, something that has been the face of japan and its animation industry. speaking about the show itself, it is a kids show. But that doesn't mean its bad. It doesn't feel like a cringefest for a grown-up as it is a well-written sci-fi slice of life story. Even though it is for a younger audience and is decently old, Many of the ideas presented in Doraemon are something that you have to give it credit for. Stuff like in an episode, they will go into a gaming world (NOT SAO XD). The actual method or the way the sci-fi gadgets are presented is pretty fun and the actual game is decently interesting too. Or take the example of an episode where Doraemon and Nobita make their vacuum cleaner into a pet to show off to their classmates. In this episode, not a lot of attention has been put to the actual sci-fi, but to the slice of life element. BTW Senkuu (Dr.Stone) grew up watching Doraemon, and honestly, I believe that Doraemon really puts one's interest towards the field of science, even if only a little.

But judging from you MAL list, I wouldn't recommend this show to you as it doesn't really have a thick plot or deep meaning behind it, nor is it the best-animated show. but if you still feel like watching it, beware about some of the recent movies as they do have that cringefest / for kids feel to them.

The main concern for me is the fact that majority of Doraemon cannot be watched since it is missing from the Internet, subbed or dubbed. I've had this issue with Pokemon and not being able to find the first 2 series subbed but eventually I decided to watch the dub (which is thankfully still available) and I love it! I'll probably switch to subs after Advanced Generations but for now I like the dub a lot.
Anyway, I mention Pokemon because I've had the option to watch it subbed and skip the episodes that aren't there and it's just... after watching the episodes I would have skipped if I'd watch only the subbed, I just can't imagine feeling the same towards it. It's very important to watch everything, I think. And Doraemon is missing so much... out of 1787 episodes, I was able to find only 280 episodes (+ a couple of movies) which is not even half of the series and there's no ending episodes, too.
The 2005 series is even less... just 132 episodes.

The stories and adventures that you mentioned seem fun, so I'll probably try watching the series with what's available. Such a shame that all the wealthy fellas can't put the money towards translating this anime. :(

Now to the main part. I Do understand your problem. But the thing is, even after being a Doraemon fan for like my whole life, I too haven’t been able to watch all of its episodes. It is a really old and, more than that, a really particularly Japanese show(not story wise but it’s background). And Believe me on this one, if you are watching Pokemon, Doraemon’s lack of episodes wouldn’t really bother you much because the whole series is just episodic. There is no final goal like “becoming a Pokemon master” like it is in Pokemon. I do support the idea that we need to watch all of it for a full experience but in a show like Doraemon, it really isn’t that bothering. And for the ending, I think there is no ending for the series, as that seems to be a topic for a movie like stand by me. So overall, you can start Doraemon even if all its episodes aren’t available, because it’s that kind of show. And if are able to find any episode you missed on the Internet, in my opinion it would be okay to pirate it as the actual legal way of watching the way isn’t available, so pirating it wouldn’t hurt the creator.

Update: managed to find pretty much all movies with the exception of a few. Surprisngly enough, the exceptions were mostly the newer movies, not the oldest ones. Have the fan-translators been eaten?? :O
As for the series - just those 280 (1979) and 132 (2005). I mean, I could try to watch it raw... when I was younger, I didn't know English at all but I played some of the English-spoken games (Metal Gear Solid series and a few others) without my native language subtitles... missed out a whole lot of details but I think that really boosted my language knowledge, more than any of the textbooks and lessons. Maybe I'll try watching Doraemon raw and it'll help me with Japanese, who knows...

as a kids show, yeah its japanese is kind of easier than other shows. I didn't have a hard time watching the show without focusing on the sub

I feel excited about watching Doraemon but I think I should finish some other anime first. XD I'll probably wrap up Digimon Adventure and/or Pokemon 1997 and then give Pokemon a bit of a break and watch Doraemon on a regular basis.

Did you know there's a Doraemon game that came out recently? It seems fun!

Sure, Its a laid back show so I'd recommend watching it when you are comfortable. And for the game, i didn't know about it. honestly, I dont think that a doraemon game could be that interesting. anyways, I'll definitely give it a try if i get the chance to.

I would recommend you to watch the stand alone movies since they are pretty fun and full of imagination.There like 20+ movies, the one i would recommend are:

1. Nobita and the Dinosaur Knight: Subterranea dinosaur kingdom and their grudge against the mammals.

2. Nobita and the Steel Troop: A robot invasion movie, pretty intense and moving at time

3. Nobita and the Pirate adventure: Pirate movie

4. Nobita the space hero: Western movie in SPACE

5. Nobita's Diary on the Creation of the World: Nobita make a new shitty world and the bee piss off.

My all-time favorites would be-

10) Nobita to Mugen Sankenshi/ Nobita and the 3 magical Swordsmen
-(a fantasy world setting but really well executed compared to the modern isekai anime)

9) Nobita the space hero -(nothing THAT special but really damn fun)

8) Nobita and the Great adventure in Antarctic Achi-Kochi -(Interesting story and the ending was pretty clever with using time travel techniques)

7) Doraemon: Nobita and the Legend of the Sun King -(I used to hate it cuz of how many times I had to see it but overall a decently well-written story)

6) Doraemon: New Nobita's Great Demon—Peko and the Exploration Party of Five -(OK this was a fun Adventure. Kind of more childish than others though)

5) Doraemon: Nobita's Secret Gadget Museum -(The Mystery was interesting)

4) Doraemon: Nobita and the Island of Miracles—Animal Adventure -(I only have fun memories of this. This was really enjoyable, especially if you like Doraemon for its scientific elements.)

3) Nobita and the new steel troops -(Really emotional ngl)

2) Nobita's New Great Adventure into the Underworld -(WOHOOOO AMAZING MOVIE, WONT SPOIL)

1)Stand by me Doraemon -(Why am I crying?)
