Do I need to have seen the previous anime or read any of the novels in order to understand/enjoy this?

I don't think you need to have read any background material to watch the show.

One caveat, first episode/arc is a bit wonky with timeskips and flashbacks so it can be confusing

no, the first episode flashes back and forth in time and those missing parts are covered in the second and third episode.

From what I understand this anime is like a reboot so no need to watch the first anime
