I'd suggest reading the light novels(either buy it or search fan translations in google). Stuff like that are better explained there. Also it's the source material.

Anyway Emilia is stronger than Maou it's just that her battle with Sariel is a mismatch. Basically she is powerless against Sariel who specializes with fighting people who uses sacred powers.
