I said I would start posting full meals! And here's the first one! =P enjoy! 4 Course Meal!
Soup:
Basic Onion Soup
Ingredients:
1/2 cup butter
5 pounds onions, thinly sliced
1 1/2 teaspoons ground black pepper
2 teaspoons salt
2 tablespoons paprika
1 bay leaf
1/4 cup all-purpose flour
3 quarts beef broth
1 cup white wine (optional)
1 dash browning sauce
1 loaf French bread, cut into 1 inch slices
2 cups shredded Swiss cheese (optional)
Preparation:
Melt the butter in a large pot over low heat. Add the onions; cook, stirring occasionally for 1 1/2 hours.
When the onions are ready, add the pepper, salt, bay leaf and flour. Stir over low heat for 10 minutes. Pour in the beef broth and white wine. Simmer for 2 hours over low heat. Adjust the coloring to a rich brown with the browning sauce. Taste, and adjust salt if needed.
Preheat your oven's broiler. Ladle the soup into oven-proof bowls, and place them on a baking sheet. Float a slice of French bread in each bowl, and top with some Swiss cheese. Broil until cheese is browned. Serve immediately.
Preparation:
Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray. Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems.
Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool.
When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared cookie sheet.
Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.
Main Dish:
Steak Tip Marinade
Ingredients:
1/2 cup Worcestershire sauce
1 cup Italian-style salad dressing
2 teaspoons garlic pepper seasoning
1 cup barbeque sauce
2 pounds beef sirloin tip steaks
Preparation:
In a medium bowl, mix the Worcestershire sauce, Italian-style salad dressing, garlic pepper seasoning, and barbeque sauce. Place the meat in the marinade, and turn to coat. Cover, and refrigerate for at least 1 hour.
Preheat grill for high heat.
Brush grill lightly with oil to prevent sticking. Place steaks on the grill, and discard marinade. Grill steaks 10 minutes on each side, or to desired doneness.
Preparation:
In a tall glass full of ice, pour rum, coconut rum, banana liqueur and blackberry brandy. Fill glass with sour mix and orange juice, then top with a dash of grenadine. Garnish with wedges of orange and lime.
Dessert:
Hot Fudge Cake
Ingredients:
1 cup all-purpose flour
3/4 cup white sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup packed brown sugar
1 3/4 cups hot water
Preparation:
In a medium bowl, combine flour, white sugar, 2 tablespoons cocoa, baking powder, and salt. Stir in the milk, oil, and vanilla until smooth. Spread in ungreased 9 inch square baking pan.
Combine brown sugar and 4 tablespoons cocoa; sprinkle over batter in the pan. Pour hot water over all; do not stir.
Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Serve warm.
Different mushrooms deliver different results. Try to use those whore in the vegetable corner of your local grocery store instead of Mushrooms from the wild or dodgy shops. ^^
