Oddly comforting to read how Jean-Louis grew up alongside the next generation of bakers and chocolate makers. His childhood was spent admiring dessert made by his peers' family members. Inevitably the shops and traditions were passed down to them. This gives Jean-Louis the knowledge of past and present technique and taste. Now it makes sense why he's such a renowned local with close relationships to the store owners!
