Why does she have an adult body now when it was already established she was an adult back in Grimoire of Zero? She wasn't a kid back then, so how did she grow up? Did I miss something? (Surely I did miss the info lol)

There was a lot of stuff that wasnt adapted. This spinoff takes place after all the event of Grimoire of Zero afaik. And the anime did Volume 1 out of 11.

Surely, no one would spoil us here with how it happened...
It's not that I dislike this genre but... to add unnecessary fan services to/in/for heroines
and ultimately destroys her character and personality; their purity tarnished because of it,
is the only thing I hope to not happen to them. For that sole purity is my fan service.

My theory is that Zero was a old,never aging woman who happens who lost her power sometime ago. When she wrote the grimwore she wasn't aging.
Also she said to the witch that the boy would be a great mage/sourcerer that surpasses the zero in 100~300(i don't recall)years if he trains hard.so it means that the boy also will be able to stop his age if he trains hard.

Since this is technically a sequel spin off there are a lot of things you won't know unless you read the light novels. In episode 5 the Dawn witch says that Zero is suffering from "magical depletion" like others have said since mana is what makes them ageless and long living then by that logic if Zero is losing her mana she is going to age and die.

That's my guess as someone who hasn't read the novels, that or the staff just decided to make her look a little more mature. The shows are produced by different studios White Fox for the original and Tezuka Productions for this.
