It has finally begun! Has anyone else been dying waiting for the actual menu contents to be announced?

I am starting a thread to archive what are actually on the menus, so I can try them as an actual cohesive menu when this is all over.

Ultimate Menu

Appetizer - Boiled egg with truffle sauce (invented at Faugeron in Paris [this restaurant has since closed]) - later modified by Shiro to be a single coddled organic egg yolk with truffle sauce spooned over

Vegetables -
- Cabbage roll filled with fugu shirako in an arrowroot dashi
- Turnip steamed in sweetfish dashi - later changed by Shiro to turnip salted and pickled in wild grape juice with a walnut sauce

Main courses:
Stingray (ei) - Red stingray fin grilled in butter and dressed with drawn butter, lemon juice, parsley, and capers

Spin-off battle:

Gyoza -
- Boiled meat, cabbage and leek gyoza
- Dessert gyoza filled with brown sugar

Supreme Menu

Appetizer - Egg yolk misozuke

Vegetables -
- Raw cabbage core with raw grated tomato sauce in the shape of a fan
- Turnip steamed with fond de veau and filled with button mushroom paste

Main courses:
Stingray (ei) - Ocellate spot skate boiled in vinegar and then shredded and dressed in warm sherry vinegar, butter, pepper, and salt

Spin-off battle:

Gyoza -
- Steamed leek soup gyoza with gyoza skin made from rice flour
- Steamed shrimp soup gyoza with gyoza skin made from rice flour
- Steamed chopped white fish soup gyoza with gyoza skin made from rice flour

If I include a break for onigiri and pickled cucumber, I think my guests would get up and leave, lol.
