Honestly though she just seems a little full of herself, and I guess wants to prove how great she is. Being number one in the school academically, a track and field star and super popular..... Now she just wants to see how she can help the little man..idk
She says she looks up to him, specifically his attack family personality. She can't believe that someone she looks up to online is a loser IRL. That's why she's wiling to help him.
Originally, she would leave right away after scolding him, but after Tomosaki said "life is a shit game" which she couldn't agree with, so begins the story.

Good point. However, it looks like she failed to consider that someone like Tomozaki is only so good in Attack Fam because he has neglected other aspects in his life, i.e. social skills and relationships.
It probably isn't too realistic, although some people do genuinely do good things for no reason and no reward.
I can't remember if Aoi's backstory has been revealed, but if it hasn't I imagine her having similar issues back when she was younger and seeing a side of her in Tomozaki that she knows she can fix

First of all, every one of you needs to know that Aoi isn't a saint. From all the cast is the character with the most complex background, this story is more about her than Tomozaki. She has a turbulent past that made her change sometime in the story into the kind of person that you see. She is the Mastermind of the story, all that happens is because of her intervention and manipulation of the events. Yeah, as Samyam5104 said, Aoi admired Nanashi and meeting Tomozaki disappointed her, BUT, here comes the twist, the reason for the help was other besides that the player she admired the most was a loser in life. The reason was darker.
To explain this, I need to go back in time in Aoi's life. You still don't know, but Aoi has or rather say, had two sisters. The author hasn't clear what happened but something bad occurred to one or both of the sisters. These sisters were important to Aoi, they made them the way she is, only talking about the "you can do your best" or "you are incredible" or "change yourself", NOT the "be the number one overall". They show her Atafami and made her a big fan of the game. As Aoi said in Episode 1, she was a low tier character, such as Tomozaki, but her sisters help her to change. As time passed and the "tragedy" arrived Aoi changed into the "corrupted" person that you see. Something interesting is that, as a novel reader, you see Aoi as a waifu; this because of the art, the fact that she is the main girl or because she wants to change Tomozaki into a better person. But all this is superficial. As the story progresses, it is better appreciated from the beginning in the anime, that the real protagonist and antagonist of the story is Aoi herself. The viewer can see, in little details, that Aoi acts strange. Sometimes she is kind of mean or rude. This is why many people watching the anime are saying: wtf this is not a waifu. In a few words, she has a way of thinking very extreme related to being a top tier character in the game of life.
Volume 9 is the volume of revelations, is the beginning of the end of the story. Here, Tomozaki and Fuuka (now a couple that is crossing difficulties) realize the true colours and intentions of Aoi and her "I want to help you, Tomozaki". What happened made me goosebumps. It made me realize that Fuuka is the real heroine of the story or at least the good girl, and Aoi will do everything to achieve her goal. What is this goal? This goal is the reason to be of Aoi and her purpose of living as a top tier character. THE FACT THAT HER METHOD OF CHANGING IN LIFE IS THE CORRECT, this is the reason. She wants to help Tomozaki for no other reason than to prove her way of being a better person, escalating the social hierarchy on the basis of rationality over the real feelings (this term is similar as used in Oregairu). Fuuka discovers that Aoi uses Tomozaki as her guinea pig only to prove her own correctness, not to really help him. Because of this, Fuuka analyses Aoi's actions and search with Tomozaki for a way to know more about her. Until now, we don't know her motivation to do this, but there is one thing that the author establishes: as how Aoi acts with everyone, but more with Tomozaki, her attitude shows a contradiction to her way of thinking, she is acting by feeling instead of being a rationalist. In the 9th volume, the reader finally falls into account the message that the author wants to transmit, the strong characters are those people who can act without a specific reason and follow their true feelings. However, Aoi is a person that always needs a reason for acting. In other words, she is a weak character.

There is only one possible answer: she has goals of her own that don't necessarily revolve around him. Certainly not out of love, since she knows better than anyone how much he is lacking as a person.
She is the type that she is strict with others and herself. As the same type of person as her, I would not fall in love with someone weak as a person either.

She's trying to groom him into a guy she can be with that matches her fake world with her gamer world.
So she wants to have here cum cake and swallow it too.

#1 Aoi "prepares" Tomozaki for herself, I know this somewhat sounds cruel to other girls which been on her "plans" and stupid thing, but I just can't get this idea from my head. for some reason.
#2 Aoi "acts" brilliant well, maybe actually she is very unsocial person and just show "perfect" self on outside (of course training and such is true), maybe she just somehow got shocked on first meeting with Tomozaki (that this guy is best player) and was thinking something like... "maybe this person can change me, I should "test" him first"
#3 Aoi is just simply helping ones, that she can help with her "experience", maybe on past Aoi was similar to ones that she is helping with "IRL game" now.
Edit: after watching episode 11, it feels like mix of #1 and #2, but maybe more #2?
