After a very shocking episode 7 there was a huge break of about a month so during this time did the studio rework the anime? This show is pretty violent and I know that doesn't fly very well in Japan all the time so do you guys think that they did rework it because I don't want to see the show drop in quality because of this.

This does not make sense. Production values and ideas and themes in certain series are not on the same logical line.

So what you want to say is that the themes will look similar to each other, but the production values is something entirely different, and it is in direct correlation with the story. Instead of "what is" the story, production values are concerned with "how is" the story.
Also, Evangelion is an extremely bad example of refined themes as the authors themselves have admitted they did not about why and what they are putting into their story, preoccupied with how cool it sounds first and foremost. All the Christian rhetoric there is disconnected from actual symbolism. They did not research it, and they did not care to provide it with intention, instead of thinking what to paint and how, they painted someone's else work but made just enough adjustments to make it look different and original. There were not layers besides the first one.

I read this in a lot of places and I very much disagree with this. Evangelion Assistant Director Kazuya Tsurumaki said that, and Hideaki Anno who wrote and directed the show said something similar in a discussion with school children during a TV show not in a serious discussion with older fans. Anno said in another interview that "Evangelion is his life and has put everything that he knows in it". Believing he did not heavily research the mythos and technical terms he used in the show is wrong. He is a writer after-all even if it's for anime.You have to take into account that they are the faces that represent the show in public and starting any controversy around religious and political issues is a thing they will avoid at all costs, even denying their inspiration and plot points. Money can be lost and lives ruined if they say something that will upset some people. So they do like all the movies on TV do:

"This is a work of fiction and all similarities to real events and people are not intentional but coincidental".

It's just insurance against reactions. Anno co-wrote and directed Nadia: the secret of blue water, another show with inspiration from ancient greek history and myths and biblical references, and Gunbuster, a sci-fi that was really serious about the passage of time during space travel with heavy plot points around the relativistic effects. It's pretty hard sci-fi for an anime and with an amazing ending that rivals classic cinema movies.

Don't sub-estimate Hideaki Anno. He is a marketing, writing and animation genius.

If a visionary is afraid to stand by his ideas, ideas he believes, he is no visionary but an opportunist. A genius opprotunist.

I guess the break was for the the upcoming underwhelming arc.

Talk about expectations vs reality... I fell bad for hyping it up so much. The memes and jokes ore OK though. I hope MAGASEEEE sticks around.

Technically it is an amazing show. I mean the mouth animation is KyoAni movie tier. Magase was mesmerizing. The direction is great. It had great ideas but I can't pinpoint exactly what made it bad at the same time.
Yet the ending was such a wimper. It would be awesome if it played like Reiner's casual reveal in AoT and then it suddenly escalate like it.
Heard Kado by the same writer is the same.
I guess there is zero chance a a volume 4 and a movie sequel to come out of this.

I feel like the show was incredibly strong up until the very end. Apparently this was an anime original ending and what happened in the novel was a bit different. Apparently from what I've heard since the novels aren't translated is that the American President does in fact kill himself and Seizaki can't do anything to Magase Ai since she mentions the picture of his family he had in his pocket, alluding to the fact that she could have his family killed at any time.
I agree that there is 0 chance for a sequel to the anime but apparently the author of the novels said he want to make a last novel to wrap up the story. I sure hope he does.
