so, this is another stand-alone like Iron-Blooded Orphans, right?

I'm kinda new to Gundam and only watched the majority of Gundam Wings when I was a kid, so don't remember too much of it... Also currently watching Orphans atm as I read it was a stand-alone.

So if I want to get into Gundam, what's the best order to watch them all in?

I'm fairly new to the franchise and not the best person to answer this, but I can give you a basic answer.
Thunderbolt takes place in the UC timeline and UC series are, for the most part, not really stand alone and require knowledge from previous shows for max. enjoyment. Thunderbolt could probably be enjoyed by people who haven't seen any UC shows, but Thunderbolt is aimed at UC fans and is probably assuming that most people watching it will know what's going.

I'd recommend starting from the beginning if you're interested in getting into the UC timeline and then just sticking with production order. If you're not sure you want to jump straight into 0079, you might want to look into 0080 War in the Pocket then. It's a 6 episode stand alone OVA that really showcases what Gundam is capable of. It's considered to be one of the best installments in the franchise too.
Here's a really good guide for those wanting to get into/more into Gundam though. It doesn't have Thunderbolt, but it has just about everything else :) http://conspiracywaffle.com/Falldog/MGuideToGundam.png

Here is my attempt at listing the series and grouping them to some order that one could consider watching. Corrections are welcome. I am merely attempting for those who want to get into the gundam series.

To save time, the gundam wikia has a section that lists most movies and series in chronological order. Thunderbolt has yet to been added but based on what I've seen of it and read (from manga) you'll be fine watching standalone or having just watched the first gundam series, Mobile Suit Gundam.

Link here: http://gundam.wikia.com/wiki/Universal_Century

(If links aren't allowed or something [I don't post much], Google gundam.wikia, then search Universal Century)

Now, most other gundam series you see out there you can watch as a standalone. It's shown clear (most of the time) if they're sequels tied to a particular series.

Hopefully this saves some time for those interested in gundam thanks to the airing Iron Blooded Orphans and Thunderbolt or other anime

Gundam Thunderbolt is a One Year War side story taking place sometime between when the Federation launched it's forces into space in November U.C 0079 and the final battle and is about the Federations attempt to reclaim the Side 4 Corrigidor Shoal Zone and former Loum Province from Zeonic forces. It's about the only other straight gateway to Side 3 and the heart of Zeon where the very first battle of the One Year War the Battle of Loum took place. You can see it being fought at the very start of Gundam The Origin and it's the bloodiest battle in the U.C Gundams history where essentially all the colonies were nuked and the result was the death of roughly half the human race in the span of a single one week battle. It also saw the first deployment of mobile suits as weapons of war by Zeon which the Federation had no answer for. Anyway that's why there's so much animosity and the Federation soldiers talking about trying to reclaim their homes that were destroyed and why you see school buses and colony debris floating frozen in the ice at the start with that chilling music playing.

Knowing this stuff IMO gives the first episode so much more dramatic weight. Here's some more background stuff. Be warned the OYW canon in and of itself is probably more expansive and dense than it even seems at first and this is just a quick summary of a years worth of events in it. Sometimes I wonder if people know just how big the Gundam universe is. I must admit the first time I read up on the U.C Timeline it was just completely overwhelming and daunting to me too. Army of the Principality of this, some political figure that, treaty this, localized yet pivotal battle that and that's just one albeit the biggest universe. There's I believe now 10 of them too. Universal Century (original and longest standing), Future Century (G Gundam), After Colony (Wing), After War (X), Correct Century (Turn A), Cosmic Era (Seed), Anno Domino (00), Advanced Generation (AGE) Anno Domino 2 (Build Fighters) and now Post Disaster (Iron Blooded Orphans)

Well I'm in a good mood lately and probably know more about Gundam canon than any other anime out there so you can realistically ask me anything and I can try to give you an answer. Right now the best piece of advice I can give you to start is to never ever listen to anything 4chan's /m/ community has to say on Gundam....like EVER. They're extremely negative about everything to do with it, disingenuous and will only ever steer you wrong and try to put you off of the franchise. Disregard that chart you saw and form your own opinion or ask me and I can probably give you a fair analysis that doesn't just par things down to a hard community bias like /m/ would. They are not the authority on Gundam or mecha and said a bad example, just remember that, watch what you like and you can't go wrong.

My other personal recommendation would be to start with the original movie trilogy which features Mobile Suit Gundam The Movie, Soldiers of Sorrow and Encounters in Space. The reason for this is because it cuts out a lot of the silly Super Robot stuff Bandai forced Sunrise to put in (this is back before they owned/fused with the company) that the staff really didn't want to but was necessary to move the model kit products at that point in time (long complicated story based on trends at the time and what viewers and sponsors felt a mecha series could be about) and because starting with the second movie the staff got a large budget and the chance to go back and redo a lot of the animation resulting in much better fight sequences, a significantly improved final act that didn't have to account for series cancellation and just far more polish overall compared to the TV series. First movie is still a bit rough on the animation cause they didn't know if it was going to be a success yet and thus didn't get to redo anything.

It also saw the first deployment of mobile suits as weapons of war by Zeon which the Federation had no answer for.

Reading The Origin and watching the movies in parallel, I thought the human losses were mainly due to the colony drop plan of Zeon (extermination of the "Side" population, earth crash, consequences). The Battle of Loom itself was more a one-sided eradication of the heavy space naval forces of the Federation, thanks to the high mobility of the newly developed weapon of Zeon (the Mobile Suits) coupled with its impressive fire-power.

Also, about the movies, except for some sad losses (lack of time for side characters, angry refugees episode, last battle on Earth), they are indeed a good rendition of the old show if you do not want to read the better drawn and sometimes more logical paper retelling from the original character-designer (Mobile Suit Gundam The Origin).

*I think it was another toy company who first supported the anime production, they were producing classic figurines. Bandai came later, during the TV reruns, because they saw the potential for what would become Gunpla and the movies were made (then Z...). It is possible that I am wrong.
